Easy Peach Muffins




It's Tasty Tuesday friends and today I wanted to share with you my recipe for super easy peach muffins.
To tell the truth, I rarely eat peaches.  Don't get me wrong, I love the smell of peach...give me a peach Yankee Candle and I'm in heaven. And back in my college days I was oblessed with Bath & Body Works peach nectar body spray.  But for some reason,  I just never really have the urge to eat anything peach.  Well this week in my field goods bag (a weekly delivery I get of fruits and veggies from local farms...they deliver to us at work...so cool!) there was a big bag of peaches.  So off to the Pinterest boards I went!  But in the end, I decided to just tweak my go-to muffin recipe.

Easy Peach Muffins
Makes 12 large muffins

2 medium peaches, diced
2 cups of Bisquick mix
1/3 c sugar
1 egg
2/3 c milk
2 Tbsp vegetable oil
1/2 tsp cinnamon
1 tsp vanilla
Pat of butter

Preheat oven to 400 degrees.
Dice up your peaches and set them aside in a small bowl.  Sprinkle some sugar over top and let them sit while you complete the other steps.



Mix together dry ingredients in a large bowl (Bisquick, sugar, cinnamon).



In a separate bowl, whisk together your wet ingredients (milk, oil, egg, vanilla).




Pour the wet ingredients into the dry ingredients and mix together.   I also mixed in a pat of butter.
Gently fold in the diced peaches.




Divide batter evenly among greased muffin cups.  Now, here is the very important part that makes these super tasty...the topping!

Topping:
2 Tbsp sugar
A shake or 2 of cinnamon

Mix the cinnamon and sugar together and sprinkle over the top of each muffin (trust me, you'll be glad you did).



Pop in the oven and cook until golden brown (15-20 minutes).
